well, you could glaze the shortcrust pastry with eggwhite to make it shiny on the edges?





of course the whites get whipped to make meringue which goes on top.





the yolks could possibly be included in the lemon curd in the middle?

meringue is made from beaten egg whites





egg can be used to help get a nice brown crunchy crust
